Brown-Forman Chef - Sonoma Cutrer Vineyard in Windsor, California
Responsible for all culinary activities for Sonoma-Cutrer Vineyards at a high quality and within budget guidelines. Promote the Sonoma-Cutrer Brand and Company Image through the use of food, wine and food pairing, food presentation and the execution of superb catering events of the highest quality.
Contribute to our unique tasting experience at Sonoma-Cutrer Vineyards.
Works closely with Hospitality team to develop weekly menus and catering menus for special events ensuring a variety of seasonal, fresh and healthful foods from local vendors when possible.
Prepares, produces, heats, cooks, bakes and serves a variety of foods including soups, entrees, meats, vegetables, desserts, breads, salads, sandwiches, sauces, beverages or other food and beverages as specified by menus, recipes, and production records.
Oversees special catering events; offers culinary instruction and demonstrates culinary techniques.
Oversees kitchen operations for winery and tasting room; plans, develops, and tests food and wine parings that will accentuate the winery’s varietals.
Develop new recipes, plan menus and meet quality standards both in volume and small quantities.
Ensures the availability of proper kitchen equipment for staff members; manages staff members on the maintenance and operation of equipment.
Keep inventories, supplies, and communicates with Sales & Event Manager, keeps the kitchen area tidy at all times.
Operates kitchen equipment such as, but not limited to, electric mixers, slicers, grinders, ovens, stoves, grills and flat tops, tilt-skillets, tilt kettles, steamers, warmers, coolers, and combi-ovens.
Performs repetitive work such as slicing, chopping, cutting, stirring, and frying.

Comply with and enforce sanitation regulations, cleanliness of stations, rotation of product and safety standards.
Ensures work/ cooking space is neat, orderly and left if a clean sanitized manner.
Develops standards and procedures for food service staff to ensure the understanding of federal, state, and local food sanitation regulations.
Arrives to work groomed, with clean hair and hands in a clean uniform - adhering to uniform guidelines.
Performs all other related duties as directed.
Ability to perform several tasks concurrently demonstrating excellent time management and organizational skills.
Excellent interpersonal, oral, verbal, and written communication skills.
Ability to effectively communicate with all levels of internal and external contacts.
Passion, enthusiasm for pairing food with wine.
Acute attention to detail.
Good judgment with the ability to make timely and sound decisions.
Ability to effectively manage priorities and workflow.
May require valid California Driver’s License for occasional travel
Basic computer skills – Word, Excel and Email
Bachelor’s Degree or equivalent job-related experience
Two year Certificate of Completion from an accredited culinary institute with food service experience OR a minimum of three years culinary experience preferred.
Skilled in food preparation, presentation, and coordination.
Experience providing input in the development of menus.
Skilled in reading, comprehending, interpreting and executing simple instructions.
Skilled in adding, subtracting, multiplying, and dividing using whole numbers
Knowledge of food and wine preparation, presentation, and coordination.
REQUIRED LICENSES :
- Food handling certification.
While performing the duties of the job, the employee is frequently required to do the following:
Walk, bend, and stand for extended periods. May be required to sit for long periods of time.
May be required to lift up to 40 pounds on occasion.
Will be required to work in the environment of a commercial kitchen with elevated temperatures and humidity.
While performing the duties of the job, the employee is frequently exposed to the following:
Walking on wet, slippery surfaces.
Handling hot liquids, ceramic plates, pans.
Working with open flame and cutlery.
